Have made Carbonara for years using a thick slice bacon and thought it was time to use Guanciale! Making it tonight, but I know it will be delicious. Excited! I bought 3 packages so I can use it in numerous recipes where I had substituted bacon for years! Hey, when you get older, it's time to splurge from time to time!

We wanted to make a pasta dish (bucatini alla'amaratriciana) that calls for guanciale and could not find it in stores near us. Vincent's had that product at a good price and the pasta dish was delicious. We won't substitute bacon for guanciale again. We will return to Vincent's Meat Market site the next time we need a specialty item.

The truth is that the shipping costs were expensive but the purchase was mostly justified because of availability. We can't get guanciale in Chapel Hill!
